Bruchetta Chicken

This is definitely not a cooking blog & I am NOT a chef by any means, !but! I made up a recipe last night. It was beyond delicious.  Jordan & I are obsessed with bruchetta. We eat it almost monthly with those nice white french bread loaves. It's probably not the best thing to eat a whole one of those between two people that often. I decided I could make a chicken substitute. The following is my recipe, not really that complicated, but it was OH so good! *the picture isn't mine. I stole it from pintrest.


Bruchetta Chicken:

3 chicken breasts, cut in half and poked sufficiently with a fork.
3 cloves of garlic, minced and separated
Salt & Pepper
Balsamic Vinegar
Olive Oil
4 roma tomatoes, diced
Fresh Basil

Once your chicken breasts are halved and poked, season with salt an pepper. Saute with a little Olive Oil half of the garlic until nearly done, About 20 min. Meanwhile, Mix tomatoes, 1 T olive oil, the other half of minced garlic and 2T balsamic vinegar. When the chicken is nearly done, brush each side with balsamic vinegar and cook 2 minuets and add the tomato mixture & cook until warmed. Yum:)

  1. ah man I wish I would have asked you how to eat bruschetta when i was there. There was a whole jar in our fridge that my dad left there. It looked like it could make something delicious but I didn't look into it :(
