Bruchetta Chicken

This is definitely not a cooking blog & I am NOT a chef by any means, !but! I made up a recipe last night. It was beyond delicious.  Jordan & I are obsessed with bruchetta. We eat it almost monthly with those nice white french bread loaves. It's probably not the best thing to eat a whole one of those between two people that often. I decided I could make a chicken substitute. The following is my recipe, not really that complicated, but it was OH so good! *the picture isn't mine. I stole it from pintrest.

Bruchetta Chicken:

3 chicken breasts, cut in half and poked sufficiently with a fork.

3 cloves of garlic, minced and separated

Salt & Pepper

Balsamic Vinegar

Olive Oil

4 roma tomatoes, diced

Fresh Basil

Once your chicken breasts are halved and poked, season with salt an pepper. Saute with a little Olive Oil half of the garlic until nearly done, About 20 min. Meanwhile, Mix tomatoes, 1 T olive oil, the other half of minced garlic and 2T balsamic vinegar. When the chicken is nearly done, brush each side with balsamic vinegar and cook 2 minuets and add the tomato mixture & cook until warmed. Yum:)

6 months of honey

                  Tomorrow is the 6 month mark of when Jordan and I got married. It isn't a landmark really, just a day we're supposed to eat our frozen wedding cake. I think it is a good test drive for our actual anniversary. We are planning on trying a new Mexican place to celebrate. Other then that and cake I wasn't expecting anything so I told J I wasn't planning on presents or cards. To which he asked, "I'm supposed to get you something on anniversaries?" I think it was a good discussion as I felt that was something everyone knew:)
                           
                  After explaining to Jordan that I'd appreciate flowers and/or a gift on our actual anniversary we talked about our relationship for quite some time. I have decided that it is beyond special. I am so very lucky and blessed to be a part of it. I don't want this to sound braggy or fake. I just want to remember this time forever. I honestly love every second I spend with the man I call my husband. I am my best, happiest self with him. We have never fought, which I know will come some day. We are in a weird transition right now where Jordan is waiting for his fabulous job to start. A wait that has been much longer than we thought it would be. Because of that, we have a lot of time to spend together. I was sure that I'd be a person in marriage who needed space and personal alone time, but every second I'm not at work, I want to be with Jord.

                  A 6 month honeymoon phase is behind us and I am looking forward to many more years of it! Marriage is so special and sacred. I would highly recommend it!

Ugly pictures of a happy girl

I never blog. Then I think I should just delete it, but that makes me feel sad & I'd probably just make another one a week later. So, this is me blogging. I lost my camera for a long time, but it has been found & I have taken a whole two pictures with it. One was at the movies after a long day at 7 peaks. I know I look LOVELY, but I want to remember how fun the day was:) The other picture is me and my beautiful friend Sarah. I had lunch with her yesterday & actually took a picture. So, I guess this is proof that I have friends:) Summer has been wonderful & I am one happy girl!! I think my husband is happy too, unless he secretly cries when I leave for work. I doubt it though
.

If it wasn't for your face...

This may be TMI, but I want to remember this funny conversation I had with Jord while getting ready to go swimming: Me: Babe, you look really good in that Under Armor. If it wasn't for your faith, you could be an underwear model. Husband: What's wrong with my face!!? To this day he still believes that I said face, not faith. Who would believe that when he has a face like this?

Random Happy Things

The semester is FINALLY over for Jordan and I. We both did really well and are excited for a break from classes this summer. We will both be working and enjoying the free time we have by going to 7 peaks:) Lately we have done a lot of fun things! We go swimming all the time at our gym. Jordan is teaching me how to dive and how to keep my face in the water when I swim:) I even got goggles!

We went to a work BBQ that was really fun. I was SO glad Trina and her husband Steven were there. They move to California in a few weeks:( We are just going to have to visit them. Jordan played volly ball with the rest of the group, but I happily watched:)

We went to an employee apreciation baseball game, UVU vs BYU. It came with hot dogs and chips. It also came with a snow cone but you'd have to be a determined 5 year old to wait in the line. IT WAS SO LONG!

Last but not least I made my first pizza from scratch and was really surprised on how well it turned out. It was a stuffed crust BBQ chicken pizza. It was fast and yummy!

We did some things that I got no pictures of that are worth mentioning also... We went on a really fun double date with Jordan's friend Mark and his girlfriend. I have never seen anyone as excited as his date when we played Monopoly deal. She would bounce up and down with excitement screaming, "I have really good cards! I think these are really good!" We found out later that she didn't even understand how you play or win. haha. We also were part of a marriage panel for a YW group. We answered all of their questions about dating and relationships. I think I was a BAD example. There were girls there who obviously had boyfriends they wanted to write on a mission. One girl basically asked me, "If you didn't steady date in high school, you wouldn't be married today, right?" I tried my best to answer her, but eventually I just told them that I was a bad example. Hopefully I will be posting much more often because we are going to have the best summer! PS: I LOVE BEING MARRIED <3 -Jamie

Hike to the Ice Caves

During spring break Jordan and I visited my parents down in Fillmore. One morning we went exploring to find what people call the ice caves. The pioneers found these "caves" in the lava rock. They always stay cold, even in the summer, so they used them to store perishable food. We had heard about them, but no one we knew had been able to find them. I did some searching on google and found directions from a geocacher. We went on blind faith. We were told that the pioneers had tried to expand the caves using dynamite and ended up collapsing them. We found them pretty easily and it was crazy how cold they were. After we did some exploring and found awesome cracks in the lava rock. Jordan decided to go down into them. He told me after that he knew going down that he would have to find a different way up. I am glad he only came up with cuts all along his hands and arms! This was a really fun adventure with my Dad. We are really excited to do it again.

The Birthday Assassin

It was Jordan's mom & brother's birthday this month. For his brother, we made him an Assassin's Creed knife sheath to go with his hoodie. It is from a video game that he loves. It was hard to tell, but I think he really liked it. I know I was proud of how it turned out!
